Tamarind Juice

Servings: 1 liter

Preparation time: 1h

 

Ingredients:

 

  • 1 cup fresh tamarind , veins removed

  • 1 litre water

  • 1 ½ cup sugar or according to taste

  • 1 tsp vanilla extract 

  • 1/4 tsp baking soda

 

Steps:

 

1) In a large bowl, combine the tamarind pulp with 3 cups hot water and let stand at least 30 minutes.

 

2) After 30 minutes, press against the pulp using a mallet to slowly separate the seeds from the pulp extracting the juice. Add the remaining water and mix.

 

3) Strain this juice using a fine strainer.

 

4) Finally, add sugar, vanilla and baking soda. Mix well and keep it in the refrigerator for at least 3 hours until it quite cold.

 

5) Serve and enjoy!
