4 pimento berries
-
4 whole cloves

2 ¼ cups sugar

-
½ tsp lemon peel, grated
-
2 tbsp lemon juice

¾ cup white rum

Steps:
-
Spread the sorrel out on aluminum foil or a white cloth which will make it easy to spot and remove any debris or unfit sorrel pieces.

Place sorrel, ginger, whole cloves, orange and lemon peels and pimento berries in a large pot or mixing bowl
-
Pour boiling water over the ingredients; stir and place in fridge overnight to steep.
