

Chris's Last Minute Frittata
Ingredients
3 eggs, beaten...
1 plum tomato, seeded and julienned
2 leaves Pak choy/ Spinach ( cut into 1/2 inch slices)
1 medium carrot , finely julienned
3 oz mozzarella, cheddar or pepperjack cheese
1/4 tsp salt
1/2 tsp black pepper
Pinch Cayenne Pepper
1 Tbsp Oil
Steps
1) Preheat oven to 350 degrees
2) Combine salt , cayenne and black pepper with beaten eggs.
3) In a small frying pan, heat oil on medium flame; when hot, add the carrots and sauté for 20 seconds.
4) Add the Pak choy or spinach, sauté for 10 seconds then immediately add the tomato.
5) Add the beaten eggs and stir the mixture until the vegetables are fully immersed in the liquid.
6) Cook for 3 to 4 minutes or until the egg mixture has set on the bottom and begins to set up on top. Sprinkle cheese on top then place in over for 3-5 minutes until the cheese has melted
7) Using a rubber spatula, carefully separate the frittata from the pan, onto a cutting board. Cut into 8, serve and enjoy <(^_^)>
